Cudighi is a spicy Italian sausage that originated in the Upper Peninsula of Michigan. It's typically made with a blend of pork, beef, and spices, and it's often served on a crusty Italian roll with marinara sauce and melted cheese.

Ingredients

  • 1 lb ground pork
  • 1/2 lb ground beef
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp fennel seeds
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup red wine vinegar
  • 4 crusty Italian rolls
  • Marinara sauce
  • Melted cheese

Instructions

  1. In a large bowl, combine the ground pork, ground beef, garlic, paprika, fennel seeds, cayenne pepper, black pepper, salt, and red wine vinegar. Mix well to combine.
  2. Form the meat mixture into 4 large patties.
  3. Heat a skillet over medium heat. Add the patties and cook for 5-7 minutes on each side, or until fully cooked.
  4. While the patties are cooking, split the Italian rolls and toast them under the broiler.
  5. Once the patties are cooked, place them on the toasted rolls. Top each patty with marinara sauce and melted cheese.
  6. Serve the cudighi sandwiches hot and enjoy!
