Cudighi
Cudighi is a spicy Italian sausage that originated in the Upper Peninsula of Michigan. It's typically made with a blend of pork, beef, and spices, and it's often served on a crusty Italian roll with marinara sauce and melted cheese.
Ingredients
- 1 lb ground pork
- 1/2 lb ground beef
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp fennel seeds
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 cup red wine vinegar
- 4 crusty Italian rolls
- Marinara sauce
- Melted cheese
Instructions
- In a large bowl, combine the ground pork, ground beef, garlic, paprika, fennel seeds, cayenne pepper, black pepper, salt, and red wine vinegar. Mix well to combine.
- Form the meat mixture into 4 large patties.
- Heat a skillet over medium heat. Add the patties and cook for 5-7 minutes on each side, or until fully cooked.
- While the patties are cooking, split the Italian rolls and toast them under the broiler.
- Once the patties are cooked, place them on the toasted rolls. Top each patty with marinara sauce and melted cheese.
- Serve the cudighi sandwiches hot and enjoy!
