Ingredients

  • 4 medium-sized squid, cleaned and tentacles removed
  • 200g shrimp, peeled and deveined
  • 4 green chilies
  • 5 shallots
  • 4 cloves garlic
  • 1 tomato
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • 3 tablespoons cooking oil

Instructions

  1. Prepare the stuffing by blending the shrimp, shallots, and garlic into a paste.
  2. Stuff the squid with the shrimp paste and secure the openings with toothpicks.
  3. Heat the cooking oil in a pan and fry the stuffed squid until golden brown. Set aside.
  4. In the same pan, blend the green chilies, shallots, garlic, and tomato into a paste.
  5. Heat the remaining oil in the pan and sauté the chili paste until fragrant.
  6. Add tamarind paste, sugar, and salt. Cook until the sauce thickens.
  7. Add the fried stuffed squid into the sauce and coat evenly.
  8. Serve the Cumi Balado Hijau Pedas hot with steamed rice.
