Cumi Balado (spicy Squid Balado)

Ingredients
- 500g squid, cleaned and cut into rings
- 5 shallots, finely chopped
- 5 cloves garlic, minced
- 5 red chilies, finely sliced
- 2 tomatoes, diced
- 1 tsp tamarind paste
- 1 tsp sugar
- Salt to taste
- Oil for frying
Instructions
- Heat oil in a pan and fry the squid until golden brown. Set aside.
- In the same pan, sauté the shallots, garlic, and red chilies until fragrant.
- Add the tomatoes, tamarind paste, sugar, and salt. Cook until the tomatoes are soft.
- Add the fried squid to the pan and toss to coat with the spicy sauce.
- Simmer for a few minutes before removing from heat.
