Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar

- 1/2 cup coquito (coconut and rum drink)
- 1/4 cup coconut milk
- 1/2 cup shredded coconut (sweetened)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the coquito and coconut milk.
- Stir in the shredded coconut until just combined.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
