  • 2 lbs goat meat, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 2 tbsp tomato paste
  • 1 cup beef or vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Oil for frying
  • Pastechi pastry dough (store-bought or homemade)

Instructions

  1. Season the goat meat with salt, pepper, cumin, and paprika.
  2. Heat oil in a large pot over medium heat and brown the seasoned goat meat.
  3. Add the onion, garlic, tomatoes, and bell pepper to the pot and cook until the vegetables are softened.
  4. Stir in the tomato paste and pour in the broth. Bring to a simmer, then cover and cook for 1.5 to 2 hours, or until the goat meat is tender.

  6. Divide the dough into small balls and roll each ball into a thin circle.
  7. Place a spoonful of the goat stew filling onto one half of the pastry circle, then fold the other half over the filling to create a half-moon shape. Press the edges to seal.
  8. Heat oil in a deep skillet and fry the pastechi until golden brown and crispy on both sides.
  9. Remove the pastechi from the oil and drain on paper towels.
  10. Serve the Curaçaoan Kabritu Stobá Pastechi hot with your favorite side dishes.
