Ingredients
- 2 lbs goat meat, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 2 tbsp tomato paste
- 1 cup beef or vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Oil for frying
- Pastechi pastry dough (store-bought or homemade)
Instructions
- Season the goat meat with salt, pepper, cumin, and paprika.
- Heat oil in a large pot over medium heat and brown the seasoned goat meat.
- Add the onion, garlic, tomatoes, and bell pepper to the pot and cook until the vegetables are softened.
- Stir in the tomato paste and pour in the broth. Bring to a simmer, then cover and cook for 1.5 to 2 hours, or until the goat meat is tender.
- While the stew is cooking, prepare the pastechi pastry dough according to the package instructions or your homemade recipe.
- Divide the dough into small balls and roll each ball into a thin circle.
- Place a spoonful of the goat stew filling onto one half of the pastry circle, then fold the other half over the filling to create a half-moon shape. Press the edges to seal.
- Heat oil in a deep skillet and fry the pastechi until golden brown and crispy on both sides.
- Remove the pastechi from the oil and drain on paper towels.
