Curaçaoan Kadushi (Cactus) Soup is a traditional dish from the Caribbean island of Curaçao. This unique soup is made with the edible parts of the prickly pear cactus, known locally as "kadushi."
Ingredients
- 2 cups diced cactus (kadushi)
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, chopped
- 6 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onions, garlic, and scotch bonnet pepper until the onions are translucent.
- Add the diced cactus and tomatoes to the pot and cook for 5 minutes.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat and let the soup simmer for 45 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
