Ingredients

  • 2 cups diced cactus (kadushi)
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 6 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onions, garlic, and scotch bonnet pepper until the onions are translucent.
  2. Add the diced cactus and tomatoes to the pot and cook for 5 minutes.
  3. Pour in the vegetable broth and bring the soup to a boil.
  4. Reduce the heat and let the soup simmer for 45 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
