Curaçaoan Keshi Yena (stuffed Cheese) Lasagna

Ingredients

  • 6 slices of keshi yena (stuffed cheese)
  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup tomato sauce
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 12 lasagna noodles, cooked al dente
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are tender.
  2. Stir in the tomato sauce, cumin, paprika, and dried oregano. Simmer for 10 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Spread a thin layer of the meat sauce in the bottom of a 9x13 inch baking dish. Place 4 lasagna noodles on top.
  5. Layer half of the keshi yena slices on top of the noodles, then sprinkle with mozzarella and Parmesan cheese. Repeat the layers, ending with a layer of meat sauce and cheese on top.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  8. Let the lasagna rest for 10 minutes before slicing. Garnish with fresh parsley and serve hot.
