Curaçaoan Krioyo (creole) Grouper

Ingredients

  • 4 grouper fillets
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 scotch bonnet pepper, finely chopped
  • 1 lime, juiced
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Season the grouper fillets with salt, pepper, paprika, and cumin.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the seasoned grouper fillets and cook for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. In the same skillet, add the onion, garlic, bell pepper, and scotch bonnet pepper. Sauté for 3-4 minutes until the vegetables are tender.
  5. Add the diced tomatoes and cook for an additional 2-3 minutes.
  6. Return the grouper fillets to the skillet, pour the lime juice over the fish, cover, and let it simmer for 10-12 minutes until the fish is cooked through.
  7. Serve the Curaçaoan Krioyo Grouper hot, garnished with fresh cilantro and slices of lime.
