Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup chicken broth
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp thyme
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, cumin, and paprika.
- Heat the vegetable oil in a large pot over medium heat.
- Add the seasoned chicken pieces and brown them on all sides. Remove and set aside.

- Return the browned chicken pieces to the pot and bring the stew to a simmer.
- Cover and cook for 45-50 minutes, or until the chicken is tender and fully cooked.
- Adjust the seasoning with salt and pepper if needed.
