Ingredients

  • 1 whole chicken, cut into pieces

  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the chicken pieces with salt, pepper, cumin, and paprika.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the seasoned chicken pieces and brown them on all sides. Remove and set aside.
  4. In the same pot, sauté the onions, garlic, and bell pepper until softened.
  5. Add the tomatoes, tomato paste, thyme, and chicken broth. Stir to combine.
  6. Return the browned chicken pieces to the pot and bring the stew to a simmer.
  7. Cover and cook for 45-50 minutes, or until the chicken is tender and fully cooked.
  8. Adjust the seasoning with salt and pepper if needed.
