Curaçaoan Stewed Okra And Salted Pork Pastechi

Ingredients

  • 1 lb okra, chopped
  • 1/2 lb salted pork, diced
  • 2 cups all-purpose flour
  • 1/2 cup cold water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying

Instructions

  1. In a large pot, combine the chopped okra and diced salted pork. Cook over medium heat for 20 minutes, stirring occasionally, until the okra is tender and the pork is cooked through.
  2. While the okra and pork are stewing, prepare the pastechi dough. In a mixing bowl, combine the flour, salt, and black pepper. Gradually add the cold water and knead the dough until smooth. Divide the dough into 8 equal portions and roll each portion into a thin circle.
  3. Place a spoonful of the stewed okra and pork mixture onto one half of each dough circle. Fold the other half over the filling to create a half-moon shape, then crimp the edges to seal the pastechi.
