Ingredients
- 1 lb okra, chopped
- 1/2 lb salted pork, diced
- 2 cups all-purpose flour
- 1/2 cup cold water
- 1 tsp salt
- 1/2 tsp black pepper
- Oil for frying
Instructions
- In a large pot, combine the chopped okra and diced salted pork. Cook over medium heat for 20 minutes, stirring occasionally, until the okra is tender and the pork is cooked through.
- While the okra and pork are stewing, prepare the pastechi dough. In a mixing bowl, combine the flour, salt, and black pepper. Gradually add the cold water and knead the dough until smooth. Divide the dough into 8 equal portions and roll each portion into a thin circle.
- Place a spoonful of the stewed okra and pork mixture onto one half of each dough circle. Fold the other half over the filling to create a half-moon shape, then crimp the edges to seal the pastechi.
- Heat oil in a deep skillet over medium heat. Fry the pastechi in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
