Ingredients

  • 1 whole iguana, cleaned and cut into pieces

  • 1 scotch bonnet pepper, whole
  • 2 sprigs of thyme
  • 2 bay leaves
  • 6 cups of water

Instructions

  1. Season the iguana pieces with salt and pepper.
  2. In a large pot, heat some oil over medium heat and brown the iguana pieces on all sides. Remove from the pot and set aside.
  3. Add the onions, tomatoes, bell peppers, and garlic to the pot. Sauté until the vegetables are soft.
  4. Return the iguana pieces to the pot and add the scotch bonnet pepper, thyme, bay leaves, and water.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 2 hours, or until the iguana is tender.
  6. Season with salt and pepper to taste.
  7. Remove the scotch bonnet pepper before serving.
