Ingredients
- 1 whole iguana, cleaned and cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 2 bell peppers, sliced
- 3 cloves of garlic, minced
- 1 scotch bonnet pepper, whole
- 2 sprigs of thyme
- 2 bay leaves
- 6 cups of water
- Salt and pepper to taste
Instructions
- Season the iguana pieces with salt and pepper.
- In a large pot, heat some oil over medium heat and brown the iguana pieces on all sides. Remove from the pot and set aside.
- Add the onions, tomatoes, bell peppers, and garlic to the pot. Sauté until the vegetables are soft.
- Return the iguana pieces to the pot and add the scotch bonnet pepper, thyme, bay leaves, and water.
- Bring the soup to a boil, then reduce the heat and let it simmer for 2 hours, or until the iguana is tender.
- Season with salt and pepper to taste.
- Remove the scotch bonnet pepper before serving.
