Ingredients
- 2 lbs chicken, cut into pieces
- 2 tbsp curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 1 scotch bonnet pepper, chopped
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, and 1 tablespoon of curry powder.
- Heat vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook until browned. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the remaining curry powder and cook for 1-2 minutes to toast the spices.
- Stir in the diced tomatoes and scotch bonnet pepper, then return the browned chicken to the pot.
- Pour in the coconut milk and bring the curry to a simmer. Cover and cook for 30-35 minutes, or until the chicken is tender and the sauce has thickened.
