Curry Chicken Explosion

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 1 scotch bonnet pepper, chopped
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt, pepper, and 1 tablespoon of curry powder.
  2. Heat vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook until browned. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  4. Add the remaining curry powder and cook for 1-2 minutes to toast the spices.
  5. Stir in the diced tomatoes and scotch bonnet pepper, then return the browned chicken to the pot.
  6. Pour in the coconut milk and bring the curry to a simmer. Cover and cook for 30-35 minutes, or until the chicken is tender and the sauce has thickened.
