Ingredients
- 2 lbs chicken, cut into pieces
- 2 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 cup coconut milk
- 2 tomatoes, diced
- 1 scotch bonnet pepper, chopped (optional for heat)
- Salt and pepper to taste
- 4 roti breads
Instructions
- In a large pot, heat some oil over medium heat. Add the chicken pieces and brown them on all sides.
- Remove the chicken from the pot and set aside. In the same pot, add the curry powder and toast for a minute to release its flavors.
- Add the chopped onion, garlic, and ginger to the pot. Cook until the onions are soft and translucent.
- Pour in the coconut milk and stir to combine. Add the diced tomatoes and scotch bonnet pepper, if using. Season with salt and pepper.
- Return the chicken to the pot and bring the curry sauce to a simmer. Cover and let it cook for about 45 minutes, or until the chicken is tender.
- While the curry is cooking, warm the roti bread according to package instructions.
- Serve the curry chicken with warm roti bread and enjoy!
