Curry Chicken Roti

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 1 scotch bonnet pepper, chopped (optional for heat)
  • Salt and pepper to taste
  • 4 roti breads

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and brown them on all sides.
  2. Remove the chicken from the pot and set aside. In the same pot, add the curry powder and toast for a minute to release its flavors.
  3. Add the chopped onion, garlic, and ginger to the pot. Cook until the onions are soft and translucent.
  4. Pour in the coconut milk and stir to combine. Add the diced tomatoes and scotch bonnet pepper, if using. Season with salt and pepper.
  5. Return the chicken to the pot and bring the curry sauce to a simmer. Cover and let it cook for about 45 minutes, or until the chicken is tender.
  6. While the curry is cooking, warm the roti bread according to package instructions.
  7. Serve the curry chicken with warm roti bread and enjoy!
