Curry Chicken With Roti

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup water
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is soft and translucent.
  2. Add the curry powder to the pot and stir to coat the onions and garlic. Cook for 1-2 minutes to toast the spices.
  3. Add the chicken pieces to the pot and stir to coat them in the curry mixture. Cook for 5-7 minutes, until the chicken is browned on all sides.
  4. Pour in the coconut milk and diced tomatoes. Stir to combine, then cover the pot and simmer for 45-50 minutes, until the chicken is cooked through and the sauce has thickened.
  5. While the curry chicken is simmering, prepare the roti. In a large bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the water, kneading the dough until it is smooth and elastic.
  6. Divide the dough into 8 equal portions and roll each portion into a thin circle. Heat a non-stick pan over medium heat and cook the roti for 1-2 minutes on each side, until puffed and lightly browned.
  7. Serve the curry chicken with the warm roti and enjoy!
