Curry Chicken With Roti

Ingredients
- 2 lbs chicken, cut into pieces
- 2 tbsp curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 1 cup coconut milk
- 2 tomatoes, diced
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup water
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is soft and translucent.
- Add the curry powder to the pot and stir to coat the onions and garlic. Cook for 1-2 minutes to toast the spices.
- Add the chicken pieces to the pot and stir to coat them in the curry mixture. Cook for 5-7 minutes, until the chicken is browned on all sides.
- Pour in the coconut milk and diced tomatoes. Stir to combine, then cover the pot and simmer for 45-50 minutes, until the chicken is cooked through and the sauce has thickened.
- While the curry chicken is simmering, prepare the roti. In a large bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the water, kneading the dough until it is smooth and elastic.
- Divide the dough into 8 equal portions and roll each portion into a thin circle. Heat a non-stick pan over medium heat and cook the roti for 1-2 minutes on each side, until puffed and lightly browned.
- Serve the curry chicken with the warm roti and enjoy!
