Curry Crab Carnival
Curry Crab Carnival is a delightful Trinidad and Tobago dish that brings together the flavors of curry and fresh crab in a vibrant and aromatic curry sauce.
Ingredients
- 1 lb fresh crab, cleaned and cracked
- 2 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tomato, chopped
- 1 scotch bonnet pepper, chopped
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, garlic, and curry powder. Cook for 2-3 minutes until fragrant.
- Add the tomato and scotch bonnet pepper. Cook for another 2 minutes.
- Add the crab pieces to the pot and stir to coat with the curry mixture.
- Pour in the coconut milk and season with salt and pepper. Bring to a simmer and cook for 20-25 minutes until the crab is cooked through.
- Serve hot with steamed rice or roti.
