Ingredients

  • 1 lb fresh crab, cleaned and cracked
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tomato, chopped
  • 1 scotch bonnet pepper, chopped
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion, garlic, and curry powder. Cook for 2-3 minutes until fragrant.
  3. Add the tomato and scotch bonnet pepper. Cook for another 2 minutes.
  4. Add the crab pieces to the pot and stir to coat with the curry mixture.
  5. Pour in the coconut milk and season with salt and pepper. Bring to a simmer and cook for 20-25 minutes until the crab is cooked through.
  6. Serve hot with steamed rice or roti.
