Ingredients
- 1 small pumpkin, peeled and diced
- 1 can (400ml) coconut milk
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili flakes (adjust to taste)
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the curry powder, turmeric, cumin, coriander, and chili flakes to the pot. Stir well to coat the onion and garlic with the spices.
- Add the diced pumpkin to the pot and stir to combine with the spiced onion mixture.
- Pour in the coconut milk and stir to combine. Bring the curry to a gentle simmer and let it cook for 30-40 minutes, or until the pumpkin is tender.
- Season the curry with salt to taste. Serve the curry hot, garnished with fresh cilantro.
