Curry De Manioc Et De Coco (cassava And Coconut Curry)

Ingredients
- 500g cassava, peeled and cut into chunks
- 1 can (400ml) coconut milk
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 thumb-sized piece of ginger, grated
- 2 tomatoes, chopped
- 1-2 green chilies, sliced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- Salt and pepper to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the tomatoes and green chilies. Cook for 5 minutes, stirring occasionally.
- Add the turmeric, cumin, and coriander. Stir well to combine.
- Add the cassava chunks and coconut milk. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the cassava is tender.
- Garnish with fresh coriander leaves before serving.
