Ingredients

  • 500g cassava, peeled and cut into chunks
  • 1 can (400ml) coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tomatoes, chopped
  • 1-2 green chilies, sliced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt and pepper to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the tomatoes and green chilies. Cook for 5 minutes, stirring occasionally.
  3. Add the turmeric, cumin, and coriander. Stir well to combine.
  4. Add the cassava chunks and coconut milk. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the cassava is tender.
  5. Garnish with fresh coriander leaves before serving.
