Ingredients

  • 500g white fish fillets, cut into chunks
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1/2 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until softened.
  2. Add the garlic, ginger, and green chilies. Cook for 2 minutes.
  3. Stir in the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute.
  4. Add the tomatoes and cook until they break down and form a thick sauce.
  5. Pour in the coconut milk and bring to a simmer.
  6. Gently add the fish chunks to the pot and simmer for 10-15 minutes, or until the fish is cooked through.
  7. Season with salt to taste and garnish with fresh cilantro.
