Ingredients
- 500g white fish fillets, cut into chunks
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- 1/2 cup coconut milk
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until softened.
- Add the garlic, ginger, and green chilies. Cook for 2 minutes.
- Stir in the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute.
- Add the tomatoes and cook until they break down and form a thick sauce.
- Pour in the coconut milk and bring to a simmer.
- Gently add the fish chunks to the pot and simmer for 10-15 minutes, or until the fish is cooked through.
- Season with salt to taste and garnish with fresh cilantro.
- Serve the Djiboutian Fish Curry hot with rice or bread.
