Ingredients
- 1 lb fresh tuna, cut into chunks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tbsp fish sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the curry powder and stir for a minute to toast the spices.
- Add the tuna chunks and cook for 2-3 minutes until they start to brown.
- Pour in the coconut milk and fish sauce. Stir to combine, then add the red bell pepper.
- Simmer the curry for 15-20 minutes, or until the tuna is cooked through and the flavors have melded together.
- Season with salt and pepper to taste.
- Serve the curry over steamed rice, garnished with fresh cilantro.
