Ingredients

  • 1 lb fresh tuna, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tbsp fish sauce
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the curry powder and stir for a minute to toast the spices.
  3. Add the tuna chunks and cook for 2-3 minutes until they start to brown.
  4. Pour in the coconut milk and fish sauce. Stir to combine, then add the red bell pepper.
  5. Simmer the curry for 15-20 minutes, or until the tuna is cooked through and the flavors have melded together.
  6. Season with salt and pepper to taste.
  7. Serve the curry over steamed rice, garnished with fresh cilantro.
