Curry Goat Curry-oke
Curry Goat Curry-oke is a traditional Trinidad and Tobago dish that combines the rich flavors of curry with tender goat meat, resulting in a delicious and aromatic curry dish.
Ingredients
- 2 lbs goat meat, cut into chunks
- 3 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 2 cups coconut milk
- 2 cups water
- Salt and pepper to taste
Instructions
- Season the goat meat with salt, pepper, and 1 tbsp of curry powder. Let it marinate for 30 minutes.
- In a large pot, heat some oil over medium heat. Add the remaining curry powder and toast for 1-2 minutes until fragrant.
- Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the marinated goat meat and cook until browned on all sides.
- Stir in the tomatoes and potatoes, then pour in the coconut milk and water. Bring to a boil, then reduce the heat and simmer for 1.5 hours, or until the meat is tender.
- Adjust the seasoning with salt and pepper, then serve hot with rice or roti.
