Ingredients

  • 2 lbs goat meat, cut into chunks
  • 3 tbsp curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 2 potatoes, peeled and cubed
  • 2 cups coconut milk
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. Season the goat meat with salt, pepper, and 1 tbsp of curry powder. Let it marinate for 30 minutes.
  2. In a large pot, heat some oil over medium heat. Add the remaining curry powder and toast for 1-2 minutes until fragrant.
  3. Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  4. Add the marinated goat meat and cook until browned on all sides.
  5. Stir in the tomatoes and potatoes, then pour in the coconut milk and water. Bring to a boil, then reduce the heat and simmer for 1.5 hours, or until the meat is tender.
  6. Adjust the seasoning with salt and pepper, then serve hot with rice or roti.
