Ingredients
- 2 lbs goat meat, cut into chunks
- 2 tbsp curry powder
- 1 onion, chopped
- 3 garlic cloves, minced

- 2 tomatoes, diced
- 1 scotch bonnet pepper, chopped
- 2 cups coconut milk
- 1 cup water
- Salt and pepper to taste
- 4 roti breads
Instructions
- In a large pot, heat some oil over medium heat. Add the curry powder and cook for 1-2 minutes until fragrant.
- Add the onion, garlic, and ginger, and cook until the onion is soft.
- Add the goat meat and brown on all sides.
- Stir in the tomatoes and scotch bonnet pepper, then pour in the coconut milk and water. Season with salt and pepper.
- Bring the curry to a boil, then reduce the heat and let it simmer for 1.5-2 hours, or until the goat meat is tender.
- Warm the roti bread in a dry skillet or oven.
- Serve the curry goat with warm roti bread.
