Ingredients

  • 2 lbs goat meat, cut into chunks

  • 2 tomatoes, diced
  • 1 scotch bonnet pepper, chopped
  • 2 cups coconut milk
  • 1 cup water
  • Salt and pepper to taste
  • 4 roti breads

Instructions

  1. In a large pot, heat some oil over medium heat. Add the curry powder and cook for 1-2 minutes until fragrant.
  2. Add the onion, garlic, and ginger, and cook until the onion is soft.
  3. Add the goat meat and brown on all sides.
  4. Stir in the tomatoes and scotch bonnet pepper, then pour in the coconut milk and water. Season with salt and pepper.
  5. Bring the curry to a boil, then reduce the heat and let it simmer for 1.5-2 hours, or until the goat meat is tender.
  6. Warm the roti bread in a dry skillet or oven.
