Ingredients
- 2 ripe mangoes, peeled and cubed

- 1 cup coconut milk
- 1 cup vegetable broth
- 1 scotch bonnet pepper, whole
- Salt and pepper to taste

Instructions

- Add the onion, garlic, and bell pepper. Sauté until the vegetables are tender.
- Stir in the curry powder and cook for 1-2 minutes to toast the spices.
- Add the tomatoes and cook until they begin to soften.
- Pour in the coconut milk and vegetable broth. Stir to combine.
- Add the mango cubes and whole scotch bonnet pepper. Simmer for 15-20 minutes, or until the mango is tender.
- Season with salt and pepper to taste.
- Remove the scotch bonnet pepper before serving.
