Ingredients

  • 2 ripe mangoes, peeled and cubed
  • 1 onion, finely chopped

  • 1 bell pepper, diced
  • 1 tomato, chopped
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 scotch bonnet pepper, whole
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and bell pepper. Sauté until the vegetables are tender.
  3. Stir in the curry powder and cook for 1-2 minutes to toast the spices.
  4. Add the tomatoes and cook until they begin to soften.
  5. Pour in the coconut milk and vegetable broth. Stir to combine.
  6. Add the mango cubes and whole scotch bonnet pepper. Simmer for 15-20 minutes, or until the mango is tender.
  7. Season with salt and pepper to taste.
  8. Remove the scotch bonnet pepper before serving.
