Curry Noodles (mee Kari)

Ingredients

  • 250g egg noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 400ml coconut milk
  • 2 cups vegetable broth
  • 1 carrot, julienned
  • 1 potato, diced
  • 200g firm tofu, cubed
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Boil the egg noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Sauté the onion and garlic until fragrant.
  3. Add the curry powder, turmeric powder, and chili powder. Cook for 1-2 minutes to toast the spices.
  4. Pour in the coconut milk and vegetable broth. Stir to combine.
  5. Add the carrot, potato, and tofu. Simmer for 15-20 minutes until the vegetables are tender.
  6. Season the curry broth with salt and pepper to taste.
  7. Divide the cooked noodles into serving bowls and ladle the curry broth over the noodles.
  8. Garnish with fresh cilantro and serve hot.
