Ingredients
- 250g egg noodles
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 400ml coconut milk
- 2 cups vegetable broth
- 1 carrot, julienned
- 1 potato, diced
- 200g firm tofu, cubed
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Boil the egg noodles according to package instructions. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Sauté the onion and garlic until fragrant.
- Add the curry powder, turmeric powder, and chili powder. Cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and vegetable broth. Stir to combine.
- Add the carrot, potato, and tofu. Simmer for 15-20 minutes until the vegetables are tender.
- Season the curry broth with salt and pepper to taste.
- Divide the cooked noodles into serving bowls and ladle the curry broth over the noodles.
- Garnish with fresh cilantro and serve hot.
