Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 potatoes, peeled and diced
- 1 carrot, diced
- 1/2 cup green peas
- 2 teaspoons curry powder
- Salt to taste
Instructions
- In a large bowl, combine the flour and chilled butter. Rub the butter into the flour until it resembles breadcrumbs. Gradually add water and knead into a dough. Cover and let it rest for 30 minutes.
- Heat vegetable oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes, carrots, and green peas. Cook for 5 minutes.
- Stir in the curry powder and salt. Cook for another 2 minutes. Remove from heat and let the filling cool.
- Preheat the oven to 375°F (190°C).
- Divide the dough into 12 equal portions. Roll each portion into a circle and place a spoonful of the filling in the center. Fold the dough over the filling to form a half-moon shape. Press the edges to seal.
- Place the curry puffs on a baking sheet and bake for 20-25 minutes, or until golden brown.
- Serve hot and enjoy!
