Curry Puff Delight

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/2 cup water
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 potatoes, peeled and diced
  • 1 carrot, diced
  • 1/2 cup green peas
  • 2 teaspoons curry powder
  • Salt to taste

Instructions

  1. In a large bowl, combine the flour and chilled butter. Rub the butter into the flour until it resembles breadcrumbs. Gradually add water and knead into a dough. Cover and let it rest for 30 minutes.
  2. Heat vegetable oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the diced potatoes, carrots, and green peas. Cook for 5 minutes.
  4. Stir in the curry powder and salt. Cook for another 2 minutes. Remove from heat and let the filling cool.
  5. Preheat the oven to 375°F (190°C).
  6. Divide the dough into 12 equal portions. Roll each portion into a circle and place a spoonful of the filling in the center. Fold the dough over the filling to form a half-moon shape. Press the edges to seal.
  7. Place the curry puffs on a baking sheet and bake for 20-25 minutes, or until golden brown.
  8. Serve hot and enjoy!
