Curry Puffs (咖喱角)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold water
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 potatoes, peeled and diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 tablespoons curry powder
  • 1 teaspoon sugar
  • Salt to taste
  • Oil for deep-frying

Instructions

  1. In a bowl, mix the flour and salt. Gradually add the cold water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
  2. Heat the vegetable oil in a pan over medium heat. Add the diced onion and cook until translucent.
  3. Add the diced potatoes, carrot, and frozen peas. Cook for 5 minutes.
  4. Stir in the curry powder, sugar, and salt. Cook for another 2 minutes. Remove from heat and let the filling cool.
  5. Divide the dough into 12 equal portions. Roll each portion into a circle and place a spoonful of the curry filling in the center. Fold the dough over the filling to form a half-moon shape and crimp the edges to seal.
  6. Heat the oil for deep-frying in a pan over medium heat. Fry the curry puffs until golden brown and crispy. Drain on paper towels.
