Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold water
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 potatoes, peeled and diced
- 1 carrot, diced
- 1/2 cup frozen peas
- 2 tablespoons curry powder
- 1 teaspoon sugar
- Salt to taste
- Oil for deep-frying
Instructions
- In a bowl, mix the flour and salt. Gradually add the cold water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
- Heat the vegetable oil in a pan over medium heat. Add the diced onion and cook until translucent.
- Add the diced potatoes, carrot, and frozen peas. Cook for 5 minutes.
- Stir in the curry powder, sugar, and salt. Cook for another 2 minutes. Remove from heat and let the filling cool.
- Divide the dough into 12 equal portions. Roll each portion into a circle and place a spoonful of the curry filling in the center. Fold the dough over the filling to form a half-moon shape and crimp the edges to seal.
- Heat the oil for deep-frying in a pan over medium heat. Fry the curry puffs until golden brown and crispy. Drain on paper towels.
