Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp curry powder
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tomato, diced
- 1 cup coconut milk
- 2 cups all-purpose flour
- 1/2 cup split peas, soaked and drained
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 cup vegetable oil
Instructions
- In a bowl, combine the shrimp with curry powder and set aside to marinate.
- In a large pot, heat some oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
- Add the marinated shrimp and cook until they turn pink and are cooked through.
- Stir in the diced tomato and coconut milk, then simmer for 5-7 minutes.
- Meanwhile, prepare the dhalpuri roti by mixing the flour, split peas, turmeric, cumin, and salt in a bowl. Gradually add water to form a soft dough.
- Divide the dough into small balls and roll each one out into a thin circle. Brush with oil and fold into a square or rectangle.
- Cook the dhalpuri roti on a hot griddle until golden brown on both sides.
- Serve the curry shrimp with the dhalpuri roti and enjoy!
