Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cayenne pepper
  • 1 cup coconut milk
  • 2 tbsp cooking oil
  • Salt and pepper to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Stir in the curry powder, turmeric, cumin, coriander, and cayenne pepper. Cook for 2 minutes to toast the spices.
  5. Add the diced tomatoes and coconut milk. Season with salt and pepper.
  6. Simmer the curry for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Serve the Siswati Curry hot with rice or flatbread.
