Curry (siswati Curry)

Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 thumb-sized ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cayenne pepper
- 1 cup coconut milk
- 2 tbsp cooking oil
- Salt and pepper to taste
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, and cayenne pepper. Cook for 2 minutes to toast the spices.
- Add the diced tomatoes and coconut milk. Season with salt and pepper.
- Simmer the curry for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the Siswati Curry hot with rice or flatbread.
