Curry (spiced Lentil And Vegetable Curry)

Ingredients
- 1 cup red lentils
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 2 carrots, diced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 3 cups vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the lentils and set aside.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and cook until softened.
- Stir in the curry powder, cumin, turmeric, and ginger, and cook for 1-2 minutes.
- Add the diced carrots, bell pepper, diced tomatoes, and vegetable broth.
- Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
- Add the rinsed lentils and continue to simmer for an additional 10 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the Spiced Lentil and Vegetable Curry hot, with rice or naan bread.
