Curry (spiced Lentil And Vegetable Curry)

Ingredients

  • 1 cup red lentils
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 3 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, heat the vegetable oil over medium heat.
  3. Add the chopped onion and minced garlic, and cook until softened.
  4. Stir in the curry powder, cumin, turmeric, and ginger, and cook for 1-2 minutes.
  5. Add the diced carrots, bell pepper, diced tomatoes, and vegetable broth.
  6. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
  7. Add the rinsed lentils and continue to simmer for an additional 10 minutes, or until the lentils are tender.
  8. Season with salt and pepper to taste.
  9. Serve the Spiced Lentil and Vegetable Curry hot, with rice or naan bread.
