Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 cup mixed vegetables (peas, carrots, potatoes, etc.)
- Salt to taste
- 1/4 cup tamarind chutney
Instructions
- In a bowl, mix the flour and salt. Add the oil and mix until crumbly. Gradually add water and knead to form a smooth dough. Cover and let it rest for 30 minutes.
- Heat 1 tablespoon of oil in a pan. Add the onion and garlic, and sauté until the onion is soft and translucent.
- Stir in the curry powder and cook for 1 minute. Add the mixed vegetables and cook until they are tender. Season with salt to taste. Remove from heat and let the filling cool.
- Divide the dough into 6 equal portions and roll each portion into a circle. Cut each circle in half to form semicircles.
- Place a spoonful of the vegetable filling on one half of each semicircle. Fold the other half over the filling to form a triangle. Press the edges to seal.
- Heat oil in a pan over medium heat. Fry the samosas until they are golden brown and crispy. Drain on paper towels.
- Serve the samosas with tamarind chutney for dipping.
