Czech Beer Cheese Soup (Česká pivo sýrová polévka)

Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 cup Czech pilsner beer
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1-2 minutes.
  3. Sprinkle the flour over the onion and garlic, stirring to combine. Cook for 2-3 minutes to remove the raw flour taste.
  4. Slowly pour in the chicken or vegetable broth, stirring constantly to prevent lumps from forming.
  5. Pour in the Czech pilsner beer and bring the mixture to a simmer.
  6. Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth.
  7. Pour in the heavy cream and continue to cook for an additional 5-10 minutes, stirring occasionally, until the soup is heated through and thickened.
  8. Season with salt and pepper to taste.
  9. Serve the soup hot, garnished with chopped chives.
