Czech Potato and Mushroom Casserole (Česká bramborová a houbová zapékanka)

Ingredients
- 6 large potatoes, peeled and thinly sliced
- 1 onion, finely chopped
- 250g mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/2 cup grated cheese
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the skillet and cook until they release their liquid and become golden brown. Season with salt and pepper.
- In a separate bowl, mix the vegetable broth and heavy cream. Season with salt and pepper.
- Layer half of the sliced potatoes in a greased baking dish. Top with half of the mushroom mixture. Pour half of the cream mixture over the mushrooms and potatoes. Repeat the layers with the remaining potatoes, mushrooms, and cream mixture.
- Sprinkle the grated cheese over the top of the casserole.
- Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
- Let the casserole rest for 10 minutes before serving.
