Czech Potato Soup (Bramborová polévka)
Bramborová polévka, or Czech Potato Soup, is a comforting and hearty dish that is popular in Central European cuisine. This creamy soup is perfect for a cold winter day and is often served with crusty bread.
Ingredients
- 6 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer half of the soup to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes, then serve hot.
