Czech Potato Soup (Bramborová polévka)

Ingredients

  • 6 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
  3. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer half of the soup to a blender and blend until smooth, then return it to the pot.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Simmer for an additional 5 minutes, then serve hot.
