Czech Roast Duck (Pečená kachna)

Ingredients
- 1 whole duck, about 5-6 lbs
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp caraway seeds
- 2 apples, quartered
- 1 onion, quartered
- 4 cloves garlic, smashed
Instructions
- Preheat the oven to 350°F (175°C).
- Pat the duck dry with paper towels and season the cavity with salt, pepper, and caraway seeds.
- Stuff the cavity with the quartered apples, onion, and smashed garlic.
- Place the duck on a rack in a roasting pan and roast in the preheated oven for 2 hours, or until the internal temperature reaches 165°F (74°C).
- Let the duck rest for 15 minutes before carving and serving.
