Ingredients

  • 1 whole duck, about 5-6 lbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp caraway seeds
  • 2 apples, quartered
  • 1 onion, quartered
  • 4 cloves garlic, smashed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pat the duck dry with paper towels and season the cavity with salt, pepper, and caraway seeds.
  3. Stuff the cavity with the quartered apples, onion, and smashed garlic.
  4. Place the duck on a rack in a roasting pan and roast in the preheated oven for 2 hours, or until the internal temperature reaches 165°F (74°C).
  5. Let the duck rest for 15 minutes before carving and serving.
