Ingredients

  • 1 cup red lentils
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon chili powder
  • Salt to taste
  • 4 cups water
  • 2 tablespoons vegetable oil

Instructions

  1. Rinse the lentils and soak them in water for 15 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until golden brown.
  3. Add the diced potatoes and cook for 5 minutes.
  4. Stir in the chopped tomatoes, turmeric, cumin, coriander, chili powder, and salt. Cook for another 5 minutes.
  5. Drain the soaked lentils and add them to the pot. Pour in the water and bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the lentils and vegetables are tender.
  7. Adjust the seasoning if needed, and serve hot.
