Daal Shorba (spiced Lentil Soup)

Ingredients

  • 1 cup red lentils
  • 4 cups water
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tomato, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils under running water until the water runs clear.
  2. In a large pot, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  4. Add the chopped tomato, coriander powder, turmeric powder, and red chili powder. Cook for a few minutes until the tomatoes are soft.
  5. Add the rinsed lentils and water to the pot. Bring to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are fully cooked.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.
  7. Season with salt to taste and garnish with fresh cilantro before serving.
