Dadar Gulung (coconut Milk Pancakes)
Dadar Gulung is a traditional Indonesian dessert from Palembang, made with coconut milk and palm sugar. These sweet and fragrant pancakes are a popular treat during special occasions and celebrations.
Ingredients
- 4 eggs
- 200ml coconut milk
- 150g all-purpose flour
- 100g palm sugar, grated
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- Green food coloring (optional)
Instructions
- In a bowl, whisk the eggs, coconut milk, and vanilla extract together.
- Add the all-purpose flour, salt, and grated palm sugar. Mix until well combined.
- If desired, add a few drops of green food coloring to the batter for a vibrant color.
- Heat a non-stick pan over medium heat and lightly grease with oil.
- Pour a ladleful of the batter onto the pan and swirl to spread it thinly. Cook for 2-3 minutes until the edges start to lift.
- Carefully roll the pancake and transfer to a plate. Repeat with the remaining batter.
- Serve the Dadar Gulung warm and enjoy!
