Ingredients
- 4 eggs
- 200ml coconut milk
- 150g all-purpose flour
- 1/4 tsp salt
- 100g palm sugar, grated
- 2 pandan leaves, knotted
- 1/2 cup water
Instructions
- In a bowl, whisk together the eggs, coconut milk, flour, and salt until smooth.
- Heat a non-stick pan over medium heat and pour a ladleful of the batter into the pan, swirling to coat the bottom evenly. Cook for 2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
- Place the grated palm sugar, pandan leaves, and water in a saucepan. Cook over medium heat until the sugar has melted and the mixture thickens slightly.
- Spread the palm sugar mixture onto the cooked pancakes, then roll them up.
