Ingredients

  • 200ml coconut milk
  • 150g all-purpose flour
  • 1/4 tsp salt
  • 100g palm sugar, grated
  • 2 pandan leaves, knotted
  • 1/2 cup water

Instructions

  1. In a bowl, whisk together the eggs, coconut milk, flour, and salt until smooth.
  2. Heat a non-stick pan over medium heat and pour a ladleful of the batter into the pan, swirling to coat the bottom evenly. Cook for 2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
  3. Place the grated palm sugar, pandan leaves, and water in a saucepan. Cook over medium heat until the sugar has melted and the mixture thickens slightly.
