Dadar Gulung Santan (coconut Milk Pancakes)
Dadar Gulung Santan, also known as Coconut Milk Pancakes, is a traditional dessert from Banjar Cuisine. These sweet and fragrant pancakes are filled with a delicious coconut filling and are perfect for a special treat or dessert.
Ingredients
- 4 eggs
- 200ml coconut milk
- 150g all-purpose flour
- 100g granulated sugar
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 100g grated coconut
- 50g palm sugar, grated
- 1 pandan leaf, knotted
Instructions
- In a bowl, whisk together the eggs, coconut milk, flour, sugar, salt, and vanilla extract to make the pancake batter.
- In a separate pan, combine the grated coconut, palm sugar, and pandan leaf. Cook over low heat until the sugar has melted and the mixture is fragrant. Remove the pandan leaf and let the filling cool.
- Heat a non-stick pan over medium heat and pour a ladleful of the pancake batter into the pan. Swirl the pan to spread the batter into a thin, even layer. Cook until the edges start to lift, then flip the pancake and cook the other side until golden brown. Repeat with the remaining batter.
- Place a spoonful of the coconut filling in the center of each pancake and roll it up. Serve the Dadar Gulung Santan warm or at room temperature.
