Ingredients

  • 2 lbs beef, cut into cubes
  • 4 cups coconut milk
  • 5 shallots
  • 6 cloves garlic
  • 3 red chilies
  • 1 inch ginger
  • 1 inch galangal
  • 2 lemongrass stalks
  • 5 kaffir lime leaves
  • 1 turmeric leaf
  • 1 tsp tamarind paste
  • 2 tbsp palm sugar
  • Salt to taste

Instructions

  1. Grind shallots, garlic, red chilies, ginger, and galangal into a paste.
  2. In a pot, combine the beef, coconut milk, spice paste, lemongrass, kaffir lime leaves, turmeric leaf, tamarind paste, palm sugar, and salt.
  3. Cook over low heat for 3 hours, stirring occasionally, until the beef is tender and the sauce is thick.
