Daging Rendang Pedas, or Spicy Beef Rendang, is a traditional dish from Padang, Indonesia. It is a rich and flavorful beef stew cooked in coconut milk and a blend of aromatic spices.
Ingredients
- 2 lbs beef, cut into cubes
- 4 cups coconut milk
- 5 shallots
- 6 cloves garlic
- 3 red chilies
- 1 inch ginger
- 1 inch galangal
- 2 lemongrass stalks
- 5 kaffir lime leaves
- 1 turmeric leaf
- 1 tsp tamarind paste
- 2 tbsp palm sugar
- Salt to taste
Instructions
- Grind shallots, garlic, red chilies, ginger, and galangal into a paste.
- In a pot, combine the beef, coconut milk, spice paste, lemongrass, kaffir lime leaves, turmeric leaf, tamarind paste, palm sugar, and salt.
- Cook over low heat for 3 hours, stirring occasionally, until the beef is tender and the sauce is thick.
