Ingredients

  • 500g beef, cut into cubes
  • 2 tbsp turmeric powder
  • 4 shallots, finely chopped
  • 4 garlic cloves, minced
  • 3 red chilies, sliced
  • 2 tomatoes, diced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. Marinate the beef with turmeric powder and let it sit for 15 minutes.
  2. Heat the cooking oil in a pan over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  3. Add the marinated beef and cook until it changes color.
  4. Stir in the tomatoes, lemongrass, and kaffir lime leaves. Cook for 5 minutes.
  5. Pour in the coconut milk and bring to a simmer. Cook for 45 minutes or until the beef is tender.
  6. Season with salt to taste.
