Dairy-free Baked Falafel

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 1/4 cup chickpea flour (or all-purpose flour)
  • 1 tsp baking powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine the chickpeas, parsley, onion, garlic, cumin, coriander, cayenne pepper, chickpea flour, baking powder, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky.
  3. Scoop out about 2 tablespoons of the mixture and form it into a ball, then flatten slightly to create a patty. Repeat with the remaining mixture.
  4. Place the falafel patties on the prepared baking sheet and brush the tops with olive oil.
  5. Bake for 20-25 minutes, or until the falafels are golden and crispy.
  6. Serve the falafels with your favorite dipping sauce or in a pita with fresh veggies and tahini sauce.
