Dairy-free Cauliflower Tacos

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, paprika, salt, and pepper.
