Dairy-free Ginger Tofu Stir Fry

Ingredients
- 1 block of extra firm tofu, drained and cubed
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 tablespoon minced ginger
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and cornstarch. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove tofu from the skillet and set aside.
- In the same skillet, add the ginger and garlic. Cook for 1-2 minutes until fragrant.
- Add the bell peppers and snap peas to the skillet. Cook for 3-4 minutes until the vegetables are tender-crisp.
- Return the tofu to the skillet and pour the sauce over the tofu and vegetables. Cook for an additional 2-3 minutes until the sauce has thickened.
- Remove from heat and stir in the sliced green onions.
- Serve the stir fry over cooked rice and garnish with sesame seeds.
