Dairy-free Ginger Tofu Stir Fry

Ingredients

  • 1 block of extra firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced ginger
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and cornstarch. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove tofu from the skillet and set aside.
  3. In the same skillet, add the ginger and garlic. Cook for 1-2 minutes until fragrant.
  4. Add the bell peppers and snap peas to the skillet. Cook for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the tofu to the skillet and pour the sauce over the tofu and vegetables. Cook for an additional 2-3 minutes until the sauce has thickened.
  6. Remove from heat and stir in the sliced green onions.
  7. Serve the stir fry over cooked rice and garnish with sesame seeds.
