Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 cup small pasta (such as ditalini or small shells)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Cook for 5 minutes until the vegetables start to soften.
- Add the garlic and cook for another 2 minutes.
- Pour in the diced tomatoes and vegetable broth. Bring to a boil.
- Stir in the kidney beans, zucchini, green beans, pasta, oregano, and basil. Simmer for 15-20 minutes until the vegetables are tender and the pasta is cooked.
