Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 cup small pasta (such as ditalini or small shells)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Cook for 5 minutes until the vegetables start to soften.
  3. Add the garlic and cook for another 2 minutes.
  4. Pour in the diced tomatoes and vegetable broth. Bring to a boil.
