Dairy-free Raspberry Sorbet

Ingredients

  • 4 cups fresh raspberries
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon fresh lemon juice

Instructions

  1. In a small saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let the syrup cool to room temperature.
  2. In a blender, puree the raspberries until smooth. Press the raspberry puree through a fine-mesh sieve to remove the seeds, if desired.
  3. Stir the cooled sugar syrup and fresh lemon juice into the raspberry puree until well combined.
  4. Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, remove the dish from the freezer and stir the mixture with a fork to break up any ice crystals. Repeat this process for about 3-4 hours, or until the sorbet is firm and scoopable.
  5. Once the sorbet is frozen, it is ready to serve. Enjoy the dairy-free raspberry sorbet on its own or with fresh berries as a garnish.
