Dairy-free Raspberry Sorbet

Ingredients
- 4 cups fresh raspberries
- 1 cup granulated sugar
- 1/4 cup water
- 1 tablespoon fresh lemon juice
Instructions
- In a small saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let the syrup cool to room temperature.
- In a blender, puree the raspberries until smooth. Press the raspberry puree through a fine-mesh sieve to remove the seeds, if desired.
- Stir the cooled sugar syrup and fresh lemon juice into the raspberry puree until well combined.
- Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, remove the dish from the freezer and stir the mixture with a fork to break up any ice crystals. Repeat this process for about 3-4 hours, or until the sorbet is firm and scoopable.
- Once the sorbet is frozen, it is ready to serve. Enjoy the dairy-free raspberry sorbet on its own or with fresh berries as a garnish.
