Dairy-free Teriyaki Tofu Stir Fry
This Dairy-Free Teriyaki Tofu Stir Fry is a delicious and healthy option for a quick and easy weeknight dinner. Packed with protein and flavor, this stir fry is sure to become a family favorite.
Ingredients
- 1 block of extra firm tofu, drained and cubed
- 1 cup of broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup of teriyaki sauce
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the cubed tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- Heat the remaining tablespoon of vegetable oil in the same skillet. Add the broccoli, bell pepper, and carrot. Cook for 3-4 minutes, or until the vegetables are tender-crisp.
- Return the tofu to the skillet and pour the teriyaki sauce over the tofu and vegetables. Stir to combine and cook for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Serve the teriyaki tofu stir fry over cooked rice or noodles.
