Dairy-free Teriyaki Tofu Stir Fry

Ingredients

  • 1 block of extra firm tofu, drained and cubed
  • 1 cup of broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup of teriyaki sauce
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  2. Add the cubed tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the same skillet. Add the broccoli, bell pepper, and carrot. Cook for 3-4 minutes, or until the vegetables are tender-crisp.
  4. Return the tofu to the skillet and pour the teriyaki sauce over the tofu and vegetables. Stir to combine and cook for an additional 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the teriyaki tofu stir fry over cooked rice or noodles.
