Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 eggplants, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large pot, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
  4. Stir in the tomato paste, cumin, coriander, cinnamon, and cayenne pepper, and cook for 2 minutes.
  5. Add the diced tomatoes and chicken broth to the pot, then return the chicken thighs to the pot. Bring the mixture to a simmer, then cover and cook for 30 minutes.
  6. Add the cubed eggplant to the pot and continue to simmer, covered, for an additional 20 minutes, or until the chicken is tender and the eggplant is cooked through.
  7. Adjust the seasoning with salt and pepper, if needed. Serve the Dajaj Baingan stew hot, garnished with fresh parsley.
