Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups chicken broth
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Stir in the crushed tomatoes, tomato paste, and chickpeas. Pour in the chicken broth and season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and tender.
  6. Adjust the seasoning if needed. Serve the Dajaj Bamia hot, garnished with fresh cilantro.
