Dajaj Bamia (iraqi Chicken And Okra Stew)
Dajaj Bamia is a traditional Iraqi stew made with tender chicken and flavorful okra. This hearty and comforting dish is perfect for a cozy family meal or a gathering with friends.
Ingredients
- 1 whole chicken, cut into pieces
- 1 pound okra, trimmed and halved
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the chicken pieces with salt, pepper, turmeric, and cumin.
- Heat the olive oil in a large pot over medium heat. Add the chicken and brown on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onions and cook until softened. Add the minced garlic and cook for another minute.
- Add the diced tomatoes, paprika, and cinnamon to the pot. Stir well to combine.
- Return the browned chicken pieces to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low and let it simmer for 30 minutes.
- Add the halved okra to the pot and continue to simmer for an additional 20-30 minutes, or until the chicken is tender and the okra is cooked through.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Dajaj Bamia hot with rice or bread.
