Ingredients

  • 1 whole chicken, cut into pieces
  • 1 pound okra, trimmed and halved
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the chicken pieces with salt, pepper, turmeric, and cumin.
  2. Heat the olive oil in a large pot over medium heat. Add the chicken and brown on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onions and cook until softened. Add the minced garlic and cook for another minute.
  4. Add the diced tomatoes, paprika, and cinnamon to the pot. Stir well to combine.
  5. Return the browned chicken pieces to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low and let it simmer for 30 minutes.
  6. Add the halved okra to the pot and continue to simmer for an additional 20-30 minutes, or until the chicken is tender and the okra is cooked through.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the Dajaj Bamia hot with rice or bread.
