Dajaj Mashwi (yemeni Spiced Roast Chicken)

Ingredients

  • 1 whole chicken, about 3-4 pounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and pepper to create a spice rub.
  4. Rub the spice mixture all over the chicken, including under the skin and inside the cavity.
  5. Place the chicken on a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
  6. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
