Dajaj Mashwi is a traditional Yemeni spiced roast chicken dish that is bursting with flavor and aroma. This recipe combines a blend of aromatic spices with tender chicken, resulting in a mouthwatering dish that is perfect for a special occasion or a family meal.
Ingredients
- 1 whole chicken, about 3-4 pounds
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken and pat it dry with paper towels.
- In a small bowl, mix together the olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and pepper to create a spice rub.
- Rub the spice mixture all over the chicken, including under the skin and inside the cavity.
- Place the chicken on a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
